Plantains are a staple side dish for me. Great source of carbs and they are delicious! Here is my plantain recipe:
-2 large plantains (i like them not fully ripe and soft but not fully green and hard–in between. The softer-the sweeter; the harder-the more bitter).
-1 TBSP of coconut oil
-1 TSP minced garlic
-Salt and pepper to taste
Peel the plantains and slice them in about 1 inch chunks as if you were cutting a banana. Heat the coconut oil in a pan on the stovetop (medium heat). When the oil is hot, place the plantains on the pan and cover with a lid (still on medium heat). When the plantains are browned on the bottom side (you have to lift them up a little to check), flip each plantain. Add salt and pepper to taste and also add the garlic at this point. Brown the other side.
I have a plantain smasher, but if you don’t have one, take the plantains off the pan, and use a strong spoon to try and smash each one down. Then, heat a little more coconut oil on the pan and sautee the smashed plantains on each side for a minute or so each. Squeeze some lemon on them at the end!
