- 3 purple potatoes (they’re fairly small-makes 6 skins)
- 2 pieces of bacon, cooked and minced
- chives/green onion, chopped
- coconut oil
- salt and pepper (and any other seasonings you might like)
Bake the potatoes in the oven at 400 for about 30 minutes, or until they are soft when you poke them. Then take them out, and cut in half. When they’ve cooled off some, scoop the insides out leaving a thin layer of potato still in the skin. Mash up the scooped-out potato with salt and pepper (and whatever other seasonings you want). Grease a cooking sheet with coconut oil, and place each potato shell, facing down on the cooking sheet, so that the scooped out part is facing down on the pan. Add a little pepper to these and put these in the oven for about 20 minutes or until you see them getting crispy. Then, pull them out and add a scoop of the potato mix into each skin, along with a little minced bacon on each one and some of the chopped green onion (here is where you can add cheese if you want). Bake for another 15 minutes. Enjoy!
