Pesto Spaghetti Squash Bake

I forgot to take a picture before it started getting eaten lol so it doesn’t look very pretty! This is a good one for meal prep for lunches because you can make a lot at once.

Ingredients

  • 2 lbs all natural chicken sausage
  • 1 really big spaghetti squash
  • 1 jar of all natural pesto (my mom makes her own pesto which I should post on here because it’s delicious…this time i was lazy and bought some)
  • 1 TBSP Coconut oil
  • Casserole dish
  • Salt and pepper (any other preferred seasonings)
  • 3 eggs, whisked

Cook the chicken sausage on the stove and slice thinly. Cook the spaghetti squash in the oven, here is a *RECIPE* for how I cook mine. Spread the coconut oil in the casserole dish and add all the spaghetti from the squash. Now add all the sausage and the pesto and mix (this will take awhile because the noodles are hard to evenly cover quickly). Then stir in the whisked eggs throughout. Bake at 400 for 1 hour (should have a crispy top). šŸ™‚
