Easy Crockpot Chili

Ingredients:

  • 1 lb of ground beef/chicken or turkey (I love cooking with turkey meat but I’m not going to lie, the beef comes out the best)
  • 1/2 yellow onion, diced
  • 1 large can diced tomatoes (find the no salt added)
  • 1/4 cup diced yellow peppers
  • 1 can kidney beans (beans are not paleo and I don’t fully agree with them being “unhealthy” so I occasionally use them)
  • lots of chili powder ( I didn’t measure but I’ll guess 1/4 cup?)
  • salt and pepper to taste and any other seasonings
  • 1 tbsp minced garlic
  • 2 tsp coconut oil

Pull out the good ol’ crockpot and a regular pan as well. In the pan, heat the coconut oil over medium heat and cook the onions, garlic, and peppers until onions are clear (just a couple minutes). Add the beef/turkey/chicken and cook on medium heat still until cooked throughout. Drain any liquid from the meat mixture and then add those ingredients to the crockpot along with the can of tomatoes and the beans. Let it cook on low for about 10 hours! I add hot sauce to it when i serve 🙂
