Buffalo Chicken Lettuce Wraps



  • 1lb chicken breast
  • bundle of collard greens, rinsed
  • 1 tomato, diced
  • 1/2 yellow onion, sliced
  • salt and pepper to taste
  • 1/3 cup Frank’s Red Hot Sauce
  • 1/4 cup water
  • chopped green onions, to taste

Combine chicken, onion, hot sauce, and water in the crockpot and cook on low for 12 hours. Chicken should absorb the liquid and shred when it’s ready. 1 long piece of collard green will be one wrap prepare as many for as many wraps as you want. The collard green lettuce is stronger than most lettuce so the wraps hold well. Place chicken in the center of each leaf, add the diced tomatoes and green onion on top, and wrap them into a square (fold the two short sides in and then the two long sides on top. This is a super easy meal. Enjoy!
